Montaña Cámara Hurtado is Full Professor of Food Science and Nutrition at Universidad Complutense of Madrid. She is involves in Pharmacy, Human Nutrition and Dietetics, and Food Science and Technology Graduate Programs at Complutense University of Madrid (UCM), and Co-Chairs the Food Safety Postgraduate Program at UCM. She has developed different tasks of university management at Universidad Internacional Menéndez Pelayo.

Montaña has a holistic sight of foods. She chair the UCM research group: ALIMNOVA, New foods: scientific, technological and social aspects. She has an active research collaboration on vegetable bioactive compounds and its functional properties with Professor Charlie Shoemaker (University of California, Davis) being visiting professor of Food Folklore and health during ten years and International Network Leader of the Cal Aggie Alumni Association of the University of California, Davis. As well as with José de Berrios PhD, at USDA, Western Regional Center, CA.

She Co-Chairs the RCC Study Group "Functional and Novel Foods" with Howard Sesso, Associate Professor Associate Professor of Medicine, Harvard Medical School Brigham and Women's Hospital.

Among other remarkable merits, Montaña is an active member of the International Society of Horticultural Science (ISHS); she has been a member, and president, of the Scientific Committee of the Spanish Food Safety and Nutrition Agency (AESAN), and a member of the Royal Spanish National Academy of Pharmacy.
