Halophytes are plants that grow in harsh and unique environments.

These plants, extremely specialized to survive in salt marshes, estuaries and lagoons, can resist high salt concentrations using different strategies involving osmotic adjustments and synthesis of osmolytes and various bioactive compounds to regulate oxidative stress.

In this seminar, we will learn about some biotechnological and nutritional applications of these emerging crops in the food industry: first, their economic potential, since their productivity in high-salinity and low-water intake environments is much higher than that of traditional edible species; and second, their nutritional value in terms of their fiber, phenolic, and antioxidant contents and the great quantity of minerals such as potassium, calcium, and magnesium and other bioactive compounds.
